To save Greirat from Irithyll, you have to save Siegward from the well outside the Church before the Cathedral of the Deep by buying his armor from Patches and giving it to him. Open main doors at Cathedral of the Deep. Talk to Siegward in the well. Doing the points above should trigger the armour to be available by Patches and should allow you to send him out to find Greirat. I've done the above steps after the fact and it still worked.
